This is the recipe that I started with: Kristel's Kitchen (Thank you Kristel.)
- Slaw ingredients:
- 1 medium fresh raw turnip (mine was about the size of a tennis ball.)
- 1 medium apple (I used a macintosh)
- 1 carrot
I peeled and julienned the turnip, washed and julienned the apple, and grated the carrot.
I left the peel on the apple for color.
Put all three ingerdients into a medium sized mixing bowl.
- Dressing:
- 1 T apple cider vinegar
- 2 T olive oil (I use extra virgin, first cold pressed for this)
- 1 tsp honey
- juice of 1 lime
- fresh mint
- lemon thyme
- salt and pepper
I live in the south and still have fresh herbs growing, so these are some of the herbs I have on hand. You could use fresh parsley, and some lemon or lime zest instead of the lemon thyme and mint.
Chop the mint, and take the thyme off the stem. Whisk the dressing ingredients together. Add salt and pepper to taste.
Pour the dressing over the top and toss to coat.
I served it on a bed of spinach and added some artisan grape tomatoes on the side.
I had enough for leftovers so I decided to make some mason jar salads for the week using the slaw as the base. These are the first mason jar salads I've made.
